Corn salad
1/2 cup nuts (peants, almonds, pistachios)
6 ears corn
Fresh black pepper or red pepper flakes
1 cup herbs (basil, mint, cilantro)
1/3 cup lemon juice or vinegar
Parmesan cheese or feta
1/3 cup grapeseed oil
Kosher salt
Toast nuts until golden. Chop coarsely.
Grill corn in husks until husks are charred
Shuck corn and remove kernels
Toss everything in a large bowl
