Popovers

  • 1⅓ cups unbleached white flour

  • ½ teaspoon salt

  • 1⅓ cups milk (1 percent, 2 percent, or whole)

  • 2 large eggs or number needed to equal ½ cup when beaten

  1. Preheat oven to 450 degrees

  2. Mix flour and salt, add milk and stir

  3. Beat eggs in a separate bowl and add to the flour, hand stirring just until mixed.

  4. Using a popover pan, fill each cup 2/3 full.

  5. Bake at 450 for 20 minutes then turn heat down to 350 and bake for another 20 minutes.

When cool remove from pan and serve with jam and butter.
