Moroccan Fish Stew
1 large onion
1” ginger root
1 clove garlic
1 1/4 lbs tilapia fish
1/4 cup sliced almonds
4 tsp olive oil
1 tsp. ground cumin
1 tsp. turmeric
1 tsp. cinnamon
14 oz can diced tomatoes
1 cup water
14 oz can chickpeas
2 tsp. honey
chopped parsley or cilantro
salt + pepper
Slice onion and sauté in hot pan until translucent
Add crushed garlic, grated ginger, cumin, turmeric, cinnamon and cook about 2 minutes
Add tomato, salt + pepper, cook 10 minutes
Add fish, cut into chunks and cook 3-5 minutes.
Add chickpeas and honey.
Garnish with parsley or cilantro and toasted almonds.
