Moroccan Fish Stew

  • 1 large onion

  • 1” ginger root

  • 1 clove garlic

  • 1 1/4 lbs tilapia fish

  • 1/4 cup sliced almonds

  • 4 tsp olive oil

  • 1 tsp. ground cumin

  • 1 tsp. turmeric

  • 1 tsp. cinnamon

  • 14 oz can diced tomatoes

  • 1 cup water

  • 14 oz can chickpeas

  • 2 tsp. honey

  • chopped parsley or cilantro

  • salt + pepper

  1. Slice onion and sauté in hot pan until translucent

  2. Add crushed garlic, grated ginger, cumin, turmeric, cinnamon and cook about 2 minutes

  3. Add tomato, salt + pepper, cook 10 minutes

  4. Add fish, cut into chunks and cook 3-5 minutes.

  5. Add chickpeas and honey.

  6. Garnish with parsley or cilantro and toasted almonds.
