Broccoli Cream Soup

  • 1 tablespoon olive oil

  • 2 cups chopped onion

  • 1 pound broccoli

  • 2 cups vegetable broth

  • 6 tablespoons cream cheese

  • 1 cup milk

  • 3/4 tsp salt

  • 1/8 tsp ground red pepper

  • 1/3 cup chopped green onion

  1. Saute onion in oil, add broccoli and broth and bring to a boil. Cover and simmer 10 minutes.

  2. Using immersion blender, puree soup.

  3. Add cream cheese and milk, cook to heat.

  4. Garnish with green onion
