Broccoli Cream Soup
1 tablespoon olive oil
2 cups chopped onion
1 pound broccoli
2 cups vegetable broth
6 tablespoons cream cheese
1 cup milk
3/4 tsp salt
1/8 tsp ground red pepper
1/3 cup chopped green onion
Saute onion in oil, add broccoli and broth and bring to a boil. Cover and simmer 10 minutes.
Using immersion blender, puree soup.
Add cream cheese and milk, cook to heat.
Garnish with green onion
