Cucumber mint popsicles
1 large cucumber or a few small, peeled and chopped
1/2 cup lime juice
1/2 mint simple syrup
pinch of kosher salt
1/4 cup mint leaves
Boil 1 cup sugar in 1 cup water until it dissolves.
Turn off heat
Add 1 cup mint leaves and steep for 1 hour
Remove mint and store simple syrup in a jar.
Blend cucumber, lime juice, salt and simple syrup. Add mint leaves at the end and blend for a few minutes.
Freeze in a popsicle mold and enjoy!
