Cucumber mint popsicles

  • 1 large cucumber or a few small, peeled and chopped

  • 1/2 cup lime juice

  • 1/2 mint simple syrup

  • pinch of kosher salt

  • 1/4 cup mint leaves

  • Boil 1 cup sugar in 1 cup water until it dissolves.

  • Turn off heat

  • Add 1 cup mint leaves and steep for 1 hour

  • Remove mint and store simple syrup in a jar.

Blend cucumber, lime juice, salt and simple syrup. Add mint leaves at the end and blend for a few minutes.

Freeze in a popsicle mold and enjoy!
